what point in the song-making process do you all decide your instruments? if you decide after you have a solid draft, what placeholder instruments do you use until you decide?

ok i just realized why i'm not getting notifications from the beepbox forum
i just make a music …
then …
i forgot how i make a music … it just happens …
then sometimes i change it a little when i'm bored and listen to all the files in my “beepbox” folder
ok so about the instruments either one of these three happen:
1. the randomly selected initial instrument fits
2. i pick an instrument before making the part and it sounds fitting
3. after doing #2 and after making that part i change the instrument to something else
what point in the song-making process do you all decide your instruments? if you decide after you have a solid draft, what placeholder instruments do you use until you decide?draft? what? how do i make music?? have i been doing it wrong this entire time???
