Audacity only has crash reporting. It was added in version 3.0.3, so the version JoshAtticus is using doesn't have it.
VS Code has telemetry but it can be disabled (Settings → Application → Telemetry).

All of these are open source, so anyone can make a version with no analytics.

I remember back in the days of Windows XP, you would just install the OS and that was it. A completely fresh install with no bloatware, and the world was your oyster. Now when I install 10 on a system I have to run Windows10Debloater and BCU and then go through settings to make extra special sure I didn't leave any of the telemetry on.
