The starters of this region are Grookey, the Grass type Chimp Pokémon, Scorbunny, the Fire type Rabbit Pokémon, and Sobble, the Water type Lizard Pokémon

I like the water and grass pokemon designs, but I agree with you on the fire type one, it just looks out of place for some reason.

Final evolution types? I like the idea of triangles like in X and Y so here’s kinda not so good reasoning:
Grass/Steel for Grookey - like a metal bat and how the region has a theme of industry alongside nature
Fire/Ground for Scorbunny - rabbits live in the ground and soccer/football is played on the ground
Water/Ice for Sobble - could make ice balls or something or maybe have something to do with the cold part of the region

The secondary types are all neutral against the weaker type, and all except Grookey could deal 4x damage to the weaker type with their primary type attacks

Now is where things get interesting because there are three Pokémon not shown outside of their Pokéballs. There are also some unidentified flying birds. If you count them, that brings the number up to 45 so far.
We can stretch it even further though. I don't consider Meltan or Melmetal to be generation vii Pokémon so I'd also put them here. And we also need two box legendaries, right? I'd say the final count is 49 Pokémon in Galar so far.
