Since we're not allowed to share a same account beetween with many persons, share our email address, use private messaging, or not even using Twitter, it's incredibly difficult to collab easily without breaking the Community guidelines. My suggestion is to add a collab button. In the "My stuff“ page, under the ”See inside“ button there should be a ”Invite someone to collab" button.
The invited person, if he accepts the invitation, could be able to edit the project but only the creator would be able to share it.

That doesn’t answer my question.You probably won't see the changes until you refresh the page. What would happen if both people try to edit at the same time?

Per Sheep_maker, multi-editing a project can lead to private messaging, which is not being added due to more chances of bullying without others knowing. Another reason is due to moderation issues. That's called an “edit conflict”, and is very annoying (especially on the Wiki!). What would happen if both people try to edit at the same time?
I would imagine that the person who tried to edit later would be shown a page saying someone else is editing the project, so they can't edit it.

I would imagine that the person who tried to edit later would be shown a page saying someone else is editing the project, so they can't edit.

How would this be possible? Scratch isn't as powerful as Google so it can't be like Google Docs

Strictly speaking this wouldn't have to involve live editing, although the OP has said it would further down in the thread, it could simply lock the project while someone else is editing it. This form of collaboration (called “live editing”) still allows the collaborators to message each other privately using comments/string inputs, which is the ST's main concern
The real reason this wouldn't work as the OP describes is that allowing other people to edit the project while it is unshared is a form of private sharing, which is also rejected. For this to work, it would have to only be possible to invite people to a project after it is shared, and it would have to keep a changelog so that if a project violated the guidelines the ST would know which editor(s) to punish.
They would probably also get a lot of complaints from collabs that had fallen out and someone had vandalised or sabotaged the project. Overall it probably isn't worth the time to add this.
