Cooking!!!

Outside of scratch I am a very enthusiastic baker and chef. I love to cook and I would like to share my passion with other cooks-in-the-making. Here, I will post recipes, top ingredients and tips. I also would love it if you could also post your ideas too. I don't think anyone else has done this before, so I hope that it can become very popular.

Cooking!!!

I'm going to start soon.
I'm also going to do ingredients of the week. When an ingredient is ingredient of the week all recipes will feature that ingredient.
This weeks ingredient is (drum-roll please): Egg!
Some of the recipes that I will show you over the week are:
Perfect Scrambled Eggs, A Sort Of Cake, Maybe Banana Bread and maybe a few others.

Cooking!!!

I'm trying to figure out what to cook the missus for dinner tonight. We have many ingredients but nothing is immediately suggesting itself, frustratingly. I've some left over tomato passata that ideally should go into something but I'll be * if I know what!

Last night I made Keralan curry (not the first time!) and I must say I'm a bit jealous that she got to have the leftovers for lunch. Delicious stuff

Tomorrow will be homemade pizza (Mostly based on this recipe) which is always fantastic. Well, apart from that time I messed up the salt balance and ended up drinking several pints of water over the course of the meal!

I come from Iran and we just made traditional Iranian coconut cookies! They were DELICIOUS!

Ok, hope you don't mind with me pitching in with a classic Chinese cuisine.

Stir-fried Tomato and Scrambled Eggs
Or as I like to call it in English, “Scrambled tomato and eggs”

INGREDIENTS
3-4 eggs
3-4 tomatoes
Sugar
Salt
Oil
2-3 cloves of garlic (recommended, optional)
Soy sauce (optional)
NOTE: You can have as many eggs and tomatoes as you want, but make sure you use the same amount of each ingredient so the taste don't override each other.

TOOLS
Stir-frying pan / Wok (click here for picture)
Chopping board and a cleaver
Bowls
Deep plate (to hold the cuisine)

INSTRUCTIONS
  1. Acquire your eggs and crack them all in a bowl, and then stir it. You can put some salt if you want, half a spoon is usually enough. If you want to add any herbs/spices as flavoring, this would be a good time. Continue stirring until the liquid is filled with a solid yellow color.
  2. Put the cloves of garlic on the chopping board one at a time, and use the flat surface of the cleaver to smash it a couple of times.
  3. Wash the tomatoes and chop them into half-slices. (Chop the tomato once in the middle, and then chop the halves one at a time) Remember to cut out the stem part because no one eats the stems.
  4. Throw the smashed cloves of garlic into the pan and add some oil. It should be enough oil to cover the bottom of the pan, unless you're using a normal frying pan. In that case, covering half of the pan should be good.
  5. When the collar oil starts (slightly) popping, dump the stirred eggs into the pan. Make scrambled eggs as usual, then scrape it into another bowl or simply the plate you'll later use to hold the cuisine.
  6. You can add some more oil if you want to. Put all tomatoes into the pan and stir-fry them. Add a spoon of sugar or two when the tomatoes are looking somewhat soft.
  7. It's time for the grand slam! Throw in the eggs into the pan and stir-fry everything. Use some soy sauce if you want to get that shiny bronze color, just don't drop the entire bottle into the pan. When the eggs are turning into a somewhat orange color (from the tomato sauce) and the tomatoes are getting soft, turn off the heat and scrape the cuisine into the plate you had prepared earlier. 用餐愉快!(it means bon appetit, btw)

That's cool & all but have you tried microwave refried beans + pre-shredded cheddar/montery/mozzerella mix?
