Hi, LittlePony here! I have been on Scratch for a long time (1 year, two months, and two weeks to be exact) and I always see these projects that say “Alpha” or “BETA” I have never really figured out what they mean, so could someone please explain?

Well, they could refer to the stages of 2.0 or their stage. Scratch 2.0 went through an alpha and beta stage; if it refers to a project, it just means they're in development.

So, is Alpha further in development or beta?

Beta is further.

“Alpha” is the first letter of the Greek alphabet, and “beta” is the second letter. “Alpha” comes first, therefore, and then “beta”. Just for another side fact, “Omega” is the last letter of the Greek alphabet. Also, “Demo” comes before beta,

demo
alpha
beta

Aww…you beat the Greek guy to the Greek question. Turkey3 is absolutely right, though.
