Since there is no way for me to right click on mobile and holding down on the variable just highlights another part of the screen how can I change slider range on mobile?

Just like resizing lists, you cannot do this on mobile. Instead, you'll need to use a different device, or, if you have a Magic Keyboard, and you're using an iPad, you can enable some sort of cursor, which might work. After all, the cursor has right clicking.
