When you right- click on a Custom Block, in the dropdown, there would be a new choice saying: “Color”. When you click it, you will be taken to a page a bit like the color grid in the costume / backdrop editor, execpt much larger and with more colors. When you click one of the colors, in the Scripts Area, the Custom Block will change to the color you clicked. Sorry that was complicated, I couldn't do any screenshots

You can shift-click “Edit” and click edit block colors, but they don't save.

If you're talking about putting custom blocks into the categories like variables, operators, etc, then support.

I do not see anything that says edit block colors.

that's because this was removed in 3.0, so that counts as a support
