Here are some ideas-

Music
Let's say you heard a really good song/album. For musicals, you could make a soundtrack thing. People love music, like, what's a project without music?

Games
Is there a really good video game that you're obsessed with? Try to copy it or make something like it, like a Platformer is similar to Mario. Or create your own! Think about @Griffpatch, most followed scratcher in the world, and, uh, He only made games!!!

Tutorials
You could tell people how to make a game that you are really good at or you really like, or how to animate. Or a tutorial like This one, where it's not really how to do a project, but something else.
