I have created an Undertale AU called Undershuffle and i will make sprites, music, and fights based on it.

Sans=Undyne

Paprus=Alphys

Muffet=Mettaton

Chara=Asgore

Temmie=Nabstablook

Toriel=Asriel

Asgore=Chara

After all, one of the major problems with AU's is when creators don't check to make sure they aren't accidentally copying anyone else.
