So, yeah the title pretty much sums it up. I'd like to move my projects to a new account because, as it usually is with me, I wasn't really thinking about my username when I made it, and I want to make a second account with a better username and move all my projects there.

My second question (that's the +1) is, how is Scratch 2.0 going to detect

I can answer your first question: either remix all your projects, or download them to your computer and re-upload them to your new account.

The best way is to download your projects on your old account. On your new one, go to file, and click upload project from computer, and select your previously downloaded projects. There will be no remix tab or anything

For the 2nd question, probably if its touching your finger on the tablet screen.

For your first question, no, it is not possible to transfer them currently, besides remixong, or downloading them to your computer then uploading them on your new account.

As for your second question, I would most likely assume by touching the screen. Because on my computer whenever I touch the screen (it's a touch screen) that block seems to work for me.

That's up to the device's browser as far as I know. I don't know what will exactly happen but you should be able to test it if you have a mobile device. All I know is that it will definitely only recognise 1.
