There is no proof of him being dead. Only his followers saying he “fell into his own work” and “was shattered across space and time”
I'd recommend you to watch Game Theory's three part video about it. It's pretty interesting and he makes some very good points.

(I'm assuming in this scenario they've all been brainwashed or something XD)

Sans would be out first because he'd either just fall asleep or get dusted by one stray attack because he has 1 HP.

Mettaton NEO would probably get distracted by a mirror or something, so he'd be out next.

Correct me if I'm wrong, but I think Undyne the Undying's stats are higher than Asgore's, so she'd probably win. But a battle between those two would definitely be an awesome thing to see (Imagine Undyne and Asgore swordfighting with a spear and a trident!)
