Basically, how do I make a sprite travel along an ellipsoid “track” relative to mouse position?

Sprite position based on mouse relative position to ellipsoid "track"
Apply the equations for an ellipse and offset by the mouse position. You'll have difficulties at the edge of the screen because sprites cannot go offstage though.
