The project's thumbnail is apparently set the first time you click save now, and I can't seem to change it. On some art projects, the thumbnail is set to a screenshot halfway through me making it, and it looks really stupid. Is there any way to change it?

I think if you unshare it, then reshare?

Easiest way is to run the project. Stop where you want the thumbnail. Click “Save as copy”. Then delete the original and remove the word “copy” from the copy's title.
