Stereotypes can be racist if you're assuming something negative and/or discriminating based on that (and in general, try to avoid following negative stereotypes!). I'd suggest using Contact Us to send an email to the Scratch Team about it-they'd probably be able to help you more.
But how is this a stariotype?

You are saying that all Mexicans love avocadoes which is not true so it is a stereotype.

Few points that I might note here.

1.The meme itself originated from an advertisement by a company called “Avocadoes from Mexico”, which is a Mexican avocado company.
2. In nowhere is it stated or implied that all, or even a majority of Mexicans love avocados within the usage of the meme.
3. Avocadoes are native to central Mexico, and the country produces 45% of all the avocadoes in the world.
4. Therefore, one would infer that the intent of the advertisement (and therefore the meme) is to highlight the authenticity of the product, given that it is produced by a company registered and operating in the country where the fruit is native to.

So in short, while there is potential for the meme to be misunderstood, there is no inherent discrimination/stereotyping within it. It can be argued from either a semanntics, contextual or economic perspective that the source of the meme carries no controversial implications. Therefore, it should be acceptable to show it on the scratch platform, but communication may be necessarily to ensure that the potential misunderstandings are resolved. In addition, I would recommend that you check the logical consistency of your argument by considering multiple factors (primarily context) before acting adament about it.

I don't think OP had any racist intent.

AVACADOS FROM MEXICO IS A MEXICAN COMPANY WHAT THE HECK ARE YOU BLABBERING ABOUT (also btw if I sound like I’m lying, the source from the website in the about us is “Our story began when thousands of avocado farmers from Mexico realized the goodness growing from their trees needed to be shared with the world. So in 2013, they forged a historic partnership with importers and distributors in the U.S. to create us – a non-profit marketing organization that spreads the good news about avocados from Mexico. (Hey, that’s our name!) Ever since then, we’ve worked hard to inspire good taste, good health, and good times.“)

I get the feeling that there is more to the story here than simply an avocado that happens to originate in Mexico (as is often the case when people are posting on the forums asking about why something was taken down). In the end only you and the Scratch Team know the full story, so your best bet is to reach out to them via Contact Us and they can provide more information on what the problem was.

Also now I want some guacamole. I'm nowhere near Mexico, but I still like guacamole.
