I know how to copy a sprite in a project, but I can't paste the sprite in another project. Is there any way to do this? So I want to copy a sprite from one project to another.

Yes. At the bottom, there is a Backpack tool.
If you open it. you will see a bar at the bottom of your screen, something like this:

Though you won't have those 3 things there.

Click and drag your selected sprite to your Backpack, go to the next project, and drag your sprite to the Sprites section.
