There's cloud variables, but it would make it easier if there were cloud lists for storage keeping

However, I also have a reasonable amount of experience running a server, and know that setting up anything more complicated than numbers can get weird. While strings aren't that hard (and I don't see why they couldn't have enabled those too, unless there's something I don't know about Mongo), storing a data type that doesn't exist natively on the server is harder. A Mongo server (to my knowledge) can only store strings and numbers. Because of this, the Scratch Team needs to program their own way to store lists over multiple rows, and a system to manage them. This can take a while, as it is a fairly complicated task.

They were able to program their own system, it just did not work properly.
