Grinding games on scratch are normally a big failure so that's off the list.

Skill based games can include many aspects including arrow key based movement, reaction, aim and smart decisions. You could have your normal dodge or maze game, or you could make something unique. Look at other games and see what they do. Most of the time, a fun to make game is almost always unique, so if you want ideas I can only give smaller ones when you thought of your big game idea.

I know that lots of games are already around and taken, but if you take a really common game (like a platformer, for example) and turn it into something unique that's never been done before, that could be a lot of fun! If you're maybe looking for a simpler game to code, a maze would be fun! I also think things that you can do while watching something else (Which i find extremely helpful) like puzzles, escape rooms, and things around those lines.
