Got my storyline....now for the actual game.

How feasible is a really big game in Scratch? I've seen some of the stuff people are capable of doing (3D Mazes? 1s1s? Geezus…) and I'm sure it's possible. But how long should I realistically expect this to take?

I'm aiming for something of the horror genre. A main character wakes up one morning, only to discover that he's not truly awake. The game will consist of him trying to navigate his own nightmare.

Also curious, what's the best way to code for jumpscares? The only way I've figured out so far is to do a touching-colour trigger. Something like:
if <touching color [#f0f]?> then

say [Scary thing jumps out]
end
*obviously not actually having a sprite say that. The ‘say’ block would be replaced by the coding for the scare.

Well with the jumping in scare you could do
when [ v] < (20)
change y by (10)
wait (0.2) secs
change y by (-10)

Also I have tried in the past to make large games. I always run into the problem with having 50 broadcast and tons of variables. Then you get confused and everything gets messed up. But that is a human error I guess. So it may be possible

Yeah, the amount of variables/broadcasts is definitely intimidating. I'm hoping it's a case where, if I just stay really organized, it'll all be clear. XD
