Hello, I want to use text in my project, but I can't find the script that does that… Could you tell me where to find it?

There are say and think blocks under looks for like a speech bubble. If you want to tell a story over a picture you can make various costumes of a sprite that are just words and show that sprite over top of whatever else is going on (picture/ animation) and switch costumes as the story goes on. You can even use a sprite for a game over message or other game alerts.

So, what you say is that if I want to use text, I have to use the text sprites available on Scratch?

You can use either the think or say blocks that are under “looks” or you can just put words into a costume of a sprite but it's not a text sprite or anything. Try this:
