Here is my theory:

Because in the first game, Phone Guy mentions the ‘bite of 87’ in his first message, we know it was an event of the past. But in the second game, he does not say a thing about the bite, and on the last night, actually says that before closing, they have a final event: a birthday party. This is what most people think was the event of the bite. I'm not going to go into it that much, but game theorists have worked out the dates and wages for the year 1987, determining that that day was the day the bite happened. Because this was before the first game, Bonnie, Freddy, Foxy, and Chica didn't exist. The suspect is Mangle. Fredbear was destroyed. You only know of his existence because he's in the fourth game. But everything that happened in the fourth game is likely a dream, so the bite was Mangles fault.

I think it was either One of the Nightmares that (somehow) did it in one of their weird ways OR, it was Mangle.

Mangle didn't do it! Kids were playing with her and she would be, at best, barely able to bite someone's hand.I think it was either Toy Bonnie or maby Freddy (the old animatronics can clearly escape from their room at night, so why not during the day?)

Either Golden Freddy (or Fredbear) or Springtrap caused it. That's my theory.

Look at Mangle's jumpscare, she swings from the ceiling and bites your forehead. That is where the frontal lobe is located. Mangle probably did it to get revenge on her murderer, the Purple Guy, remember, these animatronics are the spirits of dead children given life. The problem is that the children know Purple Guy as only the daytime security guard. But Purple Guy did his job and left, and ended up biting Jeremy Fitzjerald. Night guard moved to the day shift.
