All early Pokémon Boss fights are relatively easy, but because i only played Sun until now, ??? (Anego, UB-01) is the easiest.

Beady Long Legs from Pikmin 2. Has like no health and as long as you have yellow pikmin you can attack him anytime.

tubba blubba after you beat his heart in paper mario 64 Use the power jump and then use lady bow smack attack (you have to do this attack perfect tho)

did somebody already say dark beast ganon here? he was really cool/cinematic and all but dang was he easy to beat.
(also his ost was the peak of the game)

i feel like Pikmin 4 suffers majorly from this too, if the game didn't push Oatchi on you so hard maybe it'd be more challenging but
