Since this is a pretty broad question, I won't try to get into specific things too much.

Hitbox/Hurtbox and collisions should be on the easier side, and there are a couple ways to do it. I generally use the multiple sprites approach, as it's easier to get right and debugging it is a bit nicer. At least 2 sprites are needed, one is the hitbox/hurtbox, and one handles the animations and whatevers. All collision will be calculated in the hitbox/hurtbox sprite, and the other sprite just cycles through costumes for animations.

For a health bar, you can either go with a stack-based one or a smooth one.
Here's what a 10-stack health bar looks like if you make it into a scratch block:
Boss name (s1 ::#ff0000)(s2 ::#ff0000)(s3 ::#ff0000)(s4)(s5)(s6 ::control)(s7 ::control)(s8 ::operators)(s9 ::operators)(s10 ::operators) ::#000000 hat
If you go with this, you can use 11 costumes (from 0hp->10hp) to cycle through, or use 10 clones to display each stack/segment (the original sprite can be used to make the bar's black part).

If you want to make a smooth health bar, you can make something similar to this:
Boss name [------------(transparent part)-------------] ::#000000 hat //first layer

------------[hp bar]------------- ::#aa0000 //second layer that can move

Boss name ---------------------------------------- ::#000000 hat //third layer for background
The second layer will move along the horizontal line, controlled by %hp of the boss. You will need a bit of math (and cleverly hiding the parts of the hp bar poking out) to do this though.

I recommend trying out the basics first, since there is a LOT going into a game, even if it's just a boss section.

Hey I see you having some problems. Mind if I help? If you're completely new to coding, I recommend you learn the basics of Scratch and the coding fundamentals itself. I don't recommend ytbers like Griffpatch to help you. He mostly makes complicated tutorials that are for the people who are already familiar with Scratch. The most simple and easy understanding tutorials are from the Scratch Team. You can either watch a tutorial from Scratch or their YT channel. Their videos explain everything easily and slowly. When you're familiar with how to use Scratch, you should start creating simple games first. I don't recommend creating a whole boss fight or a dream game. What I recommend is just mess and play around with Scratch and create simple games no matter if its bad or good. What matters is you will learn throughout the journey. People who are new and wants to make a complicated game instantly will have a sudden boost of motivation but will lose it only after you realize that its more harder than you think. Remember, the only thing stopping you from making good games is your Creativity and Thinking. Good Luck!
