I dont think an emoji even exists for this symbol… would it just be the symbol when doing for example _theta_? that's not very emoji-like. like others have noted, just copy and paste it if you really need to use it

This isn't really an emoji, it's just a unicode symbol. You can configure your keyboard to easily type theta symbols. Or copy and paste the symbol, of course.

Just use a greek keyboard if u want greek letters. (On windows, it's in settings > add a language)
