Just make a project called “Blank”, delete the Scratch Cat, pop sound and the “my variable” variable and then save the project as a copy every time you make a new project.

Although it doesn't take long, you shouldn't have to open it every time. There is a tutorial when you open the editor and a tutorial button in the editor. The add sprite button is really clear anyway, the new user will figure it out eventually. If they somehow don't find the button, then they can use their common sense and click on the tutorial button.

You can just right click click the delete button on the top right of every sprite and asset.
Maybe they should allow you to select the default somewhere? Like you could either have just presets (ex. with the cat or without) if this is going to be done in some way.

Oh, yeah, just realized that

Maybe only support if toggleable. Because some people like when the cat is in the editor. I mostly find it fun to delete.
