Why does it mute me every time I say Discord?

Why?

Discord is an online platform used for private messaging. For this reason, it is considered personal information — and the Scratch Team does not allow Scratchers to share personal information. Due to the popularity of this platform, and the sheer number of rotten apples who try to share Discord information with each other, the Scratch Team decided that putting “Discord” in the filterbot was the best course of action to try to prevent others from sharing this information.

By “unmoderated” they mean that on said website you can say whatever you want with no moderation involved, including curse words and NSFW stuff- which breaks the guidelines.

It can get pretty bad.

You can say “External Site,” and come people might know what you're talking about.

That's different as it's not a proper chat site (It does have comments) and the Scratch Team uses it

Discord is absolutely (and notoriously) terrible for young children. I could understand why all mentions are muted.
