Why did the word processor break after Scratch 3.0 update?
Scratch 3.0 removed support for the backspace key and shift key, so those don't work on the word processor anymore. Therefore, you can't delete or capitalize letters anymore.

Why did the word processor break after Scratch 3.0 update?
It's also worth saying that Scratch 2.0 did not officially support the backspace key and shift key, either. There were “hacked blocks” that people made/found which allowed backspace and enter inputs. As of Scratch 3.0, the hacked blocks were ultimately no longer supported, causing them to break. Scratch 3.0 removed support for the backspace key and shift key, so those don't work on the word processor anymore. Therefore, you can't delete or capitalize letters anymore.

You can actually still use an extension to bring them back. Not naming names but you probably know what I'm talking about. Why do they remove them?

Why did the word processor break after Scratch 3.0 update?
I don't have a source for this, so, I don't know why they removed backspace– Why do they remove them?
Oh wait, two people gave their answers, so…

They weren't really “removed”; they were just “not supported.” The code of the editor changed so that it could no longer support hacked blocks. Why do they remove them?
Let's put it this way. Suppose that you are a great inventor and have managed to invent a time machine, allowing the user to travel backwards or forwards in time. You make a few copies and put them up for sale. Someone buys a copy and, through some experimentation, somehow managed to find a way to use the time machine to make the best banana smoothie in the world.
Unfortunately, around the same time, you found a bug in the time machine that irreversibly turns some people into dogs. Since you don't want this to happen, you change the time machine and fix this dog problem, and furthermore fix all other copies by remotely uploading the code to the other copies of the time machine. The time machine is now safe to use: nobody will be turned into dogs.
However, the user who discovered its banana smoothie making capabilities is shocked to learn that your recent update made it no longer possible to make these banana smoothies. This shouldn't be a problem, though — when you were making and updating the time machine, you were not trying to make a machine that made good banana smoothies. You just wanted to make a machine that travels through time.
In this case, I would not say that you “removed” the ability to make banana smoothies with the time machine. You simply changed something about the time machine to make it function better, while inadvertently changing the banana smoothie making capabilities. (Indeed, I would argue that the purpose of a time machine is not to make banana smoothies…)
