Most people would give you that kind of ideas, for example: they would say, you can make a clicker game, a pong game, a platformer, etc.
The problem is, do you want to make a platformer? The platformer code is already long, and you would need to draw for a platformer too.
Try thinking outside the box. What projects would you like to see?

Those are all questions to think about when brainstorming a project. When you are out of ideas, I suggest you to do your hobby. Sitting infront of your computer will not help you think of an idea. Here are some things that hopefully will bring you some ideas to mind!

- A art piece with your favorite music in the background
- A story- tell your favorite story in a project
- A self introduction- this might sound boring, but it is worth it when you put it on your profile
- Do you play instruments? Do you sing? Maybe sing a cover for a song.
- Games, but what kind? There are lots of different types of games, but most people only think of “clicker games, platformers, and pong games” when it comes to scratch.
- A simulator? How about a project that is interactive.
- parallax - this one. A parallax might be boring at first, but once you explore the ideas, you can choose from a lot of varieties!

- Your favorite games to play - What kind of games do you play? Roblox, minecraft, among us, fornite, etc? Make a project based on that?

- Your favorite youtuber- who's your favorite? Make a cloud vote game!
Lastly, I have no idea of a project what to make for myself now, but why am I suggesting ideas? On my profile, you can see the recent project I have worked on, “legend”. I absolutely have no idea, until I suddenly wanted to make that project one morning. Maybe an idea will spark one day, unexpectedly!
I'm sorry for typing so long, but I really feel you, I gotta say xD
Hopefully you can get some ideas soon!

I totally agree with SnowyWave , try getting inspiration from the things around you! Or, just think of something completely random. I'd say most of my projects (if not all) are inspired by things I have seen or inspired by the things I like.
Here's a tip: Try putting a twist on whatever you're making. Gonna make a platformer? Make up a wacky backstory for it, or try giving it unique physics. Want to make an animation? Make the plot go in a completely different direction than what your viewers will expect.
Making unique projects inspired by the things you like are a good way to make your projects stick out.
