Not all people would be unsure about sharing their location, age and gender
is their any part of the privacy policy or scratch wiki that gives that reason why they need the information? if not i'm doomed

]if you use the google CS program and make your own teacher account + student, you can create a fully anonymous account with no personal data shared.

(no personal username, no personal password, no personal date of birth, no personal location, no personal email etc)
i know, but i want to make my own username. I wish scratch had a change username option. it's too bad it's a rejected suggestion.

I'm not sure if it's said in the Privacy Policy, but they need the info for statistics.

Yes, I know that there is a “Prefer not to say” option for anyone who wants to be neither honest or dishonest about their gender. The gender isn't asked until the birthdate is already specified, so since the birthdate went first, some random information may have been put in just so the mother and the OP only knew what the registration form asks for, but the actual signup submission may have been cancelled — though the form might have been filled out just for them to know what the registration form looks and feels like.
I still don't understand how the birthdate is sensitive
i know, i am just really nervous to ask my mom. she's kinda strict and i don't want her to get mad, but i don't want to give up either.

Yeah, just put January 1st [actual year] because the year you were born isn't going to reveal much about you, also all the data on the statistics page is annonymized, so someone looking at it would have no idea how old you actually are. Just so long as you don't share personal info publicly you're fine.
