so what's the point of having the scratch video player thing

I'm pretty sure they have to have that YouTube button there, otherwise they'll have nothing. If that's the case, what they have is really the best they can do without banning the ability to link YT videos.

I'm pretty sure that you can disable the control bars for videos using HTML, but don't quote me on that because I haven't actually fully learned HTML yet.

I am not sure, but perhaps removal of the button may not work with DjangoBB's mechanics. Besides, what would be the point of removing it? You could still just type in a video url to be copy-pasted.

Correct, see YouTube Player Parameters
The parameter for that is controls=0. Alternatively, modestbranding=1 could be set to just remove the YouTube button.
