Since I haven't had any experience in other shops, I just have a few questions as a new employee…
Whenever there is an order for art, do I always take it?
Also how do I give somebody an order? Through a screenshot, a project?

You don't have to take it if you are too busy, you cannot do it, or you don't want to.
It depends, you can use a project, but for banners, you can use image hosting sites like cubeupload and imageshack
