The second time you fight Eggman in Sonic the Hedgehog. Seriously, his pattern's super easy to figure out.

EDIT: I had a bunch of missile tanks and there was a spot to re-fill your health and missiles right be fore the boss. Just hold “ up” and spam your misses. Move to follow him and maybe dodge an attack or two. He'll go down in almost no time. Even the miniboss you fought before was harder than Ridley.

The arachnid thing, I forgot it's name, but it's so easy to get the timing right and hit it's eye with a slingshot, dropping the boss to the floor, stunned.

Easy? No. Easiest to beat? Yes, because you can't die.
Toriel is also pretty easy because once you drop down to 2 HP it's **almost** impossible for her to kill you.

i died to toriel once

To be honest, Sans is the easiest boss in terms of difficulty. I only died to him once last time I played Undertale, then i beat him.
But I die to Toriel and Asriel more often than Sans.

I'm sorry, I can usually tell when something is a wooosh but he actually sounded un-woooshy… :<

For me, it's Muffet from UNDERTALE. She runs a bake sale in the first area of the game, and if you buy something from her and manage to get thrugh the whole game without using it, you can use it in her battle to immediately skip it.
