Try contacting scratch admin (email / contact us page). Don't know if they can/will do it but give it a try. Sorry about your lost work, must be really annoying! How did you lose it?

Projects normally auto-save every few minutes, so I don't understand how you lost it. ???

You cannot access those back files as far as I am aware, as I said before, the only thing you can do is try and contact the scratch team.
Maybe have a look at this

If you can, I recommend using the Scratch Desktop application and saving local copies of your files. This lets you do a bit of versioning, and you get to choose when and how your projects are saved. If the website crashes for any reason, your work will be safe.

Interesting… I didn't know that there was a meaningful difference between the two. I've spent all my time in the Desktop Client, so I guess I wouldn't notice differences with a sample of n=1. I searched the forums and wiki for information on Scratch Desktop specific bugs, but wasn't able to find a list or a discussion of the differences dated after 2015.
This isn't an important question, so feel free to ignore it, but I'm curious about this subject. Is there a list of which bugs are specific to Scratch Desktop?

The voice blocks wont let me type text in them, and when I try to resize a sprite it just vanishes.

There are a lot of different system configurations out there, so these bugs may be somewhat hit and miss… which would definitely make them harder to find and patch.
I did take a moment to test with the Scratch Desktop Client, and I have no trouble with voice blocks (once I enable the extension), and sprite sizes seem to change as expected with positive and negative values. I tried both a simple program and a direct edit, and both appeared to operate nominally.
Test performed on Scratch Desktop 3.6.0, Mac OS 10.13.6, 2020.04.20. Your mileage may vary.

Not to be Captain Obvious, but did you push “Remix this Project” BEFORE you started messing with the Scratch Blocks?

I would assume that something being unsaved would mean that it isn't saved anywhere
