Because the whole point of git is that everything, all your versions and changes experiments and releases and branches and whatnot are in one repository. So it doesn't make a whole lot of sense for there to be a “attempt 1” repository or a “development” repository or really anything else for that matter. That's what branches and tags are for. Going from “attempt 1” to “final shiny product” should be as easy as git checkout, not switching folder, etc.

GitHub is definitely the way to go when working on large projects with multiple people. I get that you're worried about privacy and such, but github is the right choice as the large majority of ATers are extremely familiar with it and know how to make some pretty cool stuff. I would extremely suggest using GitHub.

Yes, I intend to use MySQL, PHP, HTML, and a *pinch* of Adobe Flash.

You mean Adobe Flash, right? Last I checked, MySQL, PHP and HTML are still frequently used today.
