As far as I know, the Scratch Cat has no official name. You can call him/her whatever you want

In the 2.0 beta instead of sprite1 it was called scratch cat so that's official.

His name is Scratch, Scratch the cat. Look @ THIS for more information, his afficial name is Scratch, but the Scratch cat goes by several names such as Scratchy and Scratcher and just Scratch Cat

That's just a animation and I could say with this project that got requests to be featured that the name is Scratch Cat, but as a nickname, Scratch.
My answer is Scratch Cat/Scratch/Scratchy/Whatever
