For sprites you right click when scratch is open and click on grab screen regoin for new sprite, select the area of screen you want and it will automatically make a sprite.
For the scratch home ect. you need imaging software capable of grabbing screen shots to create images to use as sprite costumes.
wow, this is really cool! It must've taken a long time to complete! I forgot, but can you refresh my memory and tell me how you got the sprites that show the Scratch home page?
Just Windows XP, you can explor it, but one hint, when you are on the scratch website, you can click on Yello's project, Grow Hogwarts, you can't play it but it brings up a screen capture of gameplay.

If you don't have the correct software to capture screen shots, you can go on google images and do an image search for what you want.
