Well, it could be down with animation. One sprite with a bunch of costumes of sand in different positions. You could probably do something with the Stamp feature too, to make it look like more sprites. That approach would be fairly difficult as you would still have to keep track of each sand particles position, so lots of variables would be needed.
A VERY early version of my attempt to sorta kinda replicate the well known falling sand game kinda poorly. very poorly. wtvr. Anyway to not require a script for each sand? I'd like more particles but it would kill Scratch!

you could have each sand grain stamp if touching the wall material or other sand
